We are two chefs who have chosen to create a place that reflects who we are. We’re delighted to welcome you to Emilie & Thomas at the Moulin de Cambelong and to share with you our universe — one born from the meeting of our individual sensibilities.

UNIQUE AND COMBINED

We wanted to create a place where each of us could express the kind of cuisine we aspire to. Together, we craft a gourmet experience that balances simplicity and sophistication — the result of a dialogue between two complementary chefs.
We offer inspiring cuisine, delicate and memorable moments, and high-end service, allowing our guests to fully savor the present, focus on their pleasure, share, and be moved.

L’aventure E&T

In 2015, we opened our first gourmet restaurant together on Place du Bourg in Rodez. After taking over Le Parfum des Délices, we gradually transformed it to reflect our vision, and three years later, it became Restaurant E&T.

In the spring of 2023, after years of dreaming and planning, we made the bold decision to relocate our restaurant near Conques, in the stunning setting of Le Moulin de Cambelong. It was both a major challenge and a unique opportunity to offer our guests an exceptional experience — one that goes far beyond gastronomy alone.

This new chapter was crowned with success in 2024, when our passion and commitment to culinary excellence were rewarded with a Michelin star. This distinction is both a recognition of our work and a tribute to our incredible team, who share our vision of delivering unforgettable gastronomic moments.

Émilie & Thomas

Our symmetrical paths

Our journey began with formative experiences alongside some of the most renowned chefs in prestigious establishments.

Originally from Aveyron, Émilie studied at the Souillac Hotel School and later in Nice, before honing her skills in the kitchens of iconic palaces such as the Grand Hôtel in Saint-Jean-Cap-Ferrat, La Messardière in Saint-Tropez, Le Jules Verne at the Eiffel Tower in Paris (Ducasse Group), and Les Airelles in Courchevel.

Upon returning to Aveyron with Thomas, she joined the team of the Fagegaltier-Rouquier family in Belcastel, before opening Restaurant E&T.

Thomas grew up in Haute-Savoie and trained with some of the greats, alternating seasons between summer with Sébastien Bras at Le Suquet and winter with Pierre Gagnaire at Les Airelles in Courchevel.

It was during this time that he met Émilie. Together, they chose to settle in Aveyron, driven by the shared dream of opening their own restaurant.

DISCOVER ALSO LE FLACONNEUR

With great enthusiasm, we co-created the « Flaconneur » in Rignac, in 2000. It is a wine bar where we offer an authentic cuisine accompanied by organic and natural wines offered by our friends and associates Maguy and Gilles. We are delighted to have given new life to this establishment in the heart of the village.

A warn, friendly, and sharing place in the heart of the village of Rignac.

After some work, we gave a new identity to this place « Le Flaconneur ».
