Two chefs

We are two chefs who have chosen to create a place together that reflects our image. We are delighted to welcome you today to Emilie & Thomas at the Moulin de Cambelong and to introduce you to our universe, born from the combination of our sensitivities.

UNIQUE AND COMBINED

We wanted to create a place that allows each of us to express the cuisine we aspire to. And to make a gourmet cuisine together, between simplicity and sophistication, as the result of the dialogue between two complementary chefs.
We offer inspiring cuisine, delicate and memorable moments, high-end services so that our clients can simply savor the moment, focus on their pleasure, share and be enthusiastic.

The E&T adventure

In 2015, we opened our own gourmet restaurant together on Place du Bourg in Rodez. Taking over the restaurant 'Le Parfum des Délices,' we gradually transformed it to our taste, and three years later, it became the restaurant 'E&T'.

In the spring of 2023, after dreaming about it for a long time, we made the choice to relocate our restaurant near Conques, in the magnificent setting of Le Moulin de Cambelong. It was a tremendous challenge for us and an opportunity to offer our visitors an exceptional experience that goes far beyond just gastronomy.

This new milestone was successfully achieved in 2024, when our passion and dedication to culinary excellence were rewarded with the acquisition of a Michelin star. This distinction is a recognition of our work and a tribute to our team, who shares our vision of offering an unforgettable gastronomic experience.

EMILIE & THOMAS

Our symmetrical paths

Our experience with some of the most renowned chefs, in palaces, got us started.

Originally from Aveyron, Émilie studied at the Souillac Hotel School and then in Nice before joining the kitchens of various palaces such as the Grand Hôtel in Saint-Jean-Cap-Ferrat, La Messardière in Saint-Tropez, Le Jules Verne at the Eiffel Tower in Paris (Ducasse Group), and Les Airelles in Courchevel. Upon returning with Thomas to Aveyron, she joined the teams of the Fagegaltier-Rouquier family in Belcastel, before opening the "E&T" restaurant.
After spending his childhood in Haute-Savoie, Thomas trained with the greatest chefs, alternating seasons: summers with Sébastien Bras at Le Suquet and winters in Courchevel with Gagnaire at Les Airelles. It was then that he met Emilie, with whom he decided to settle in Aveyron, with the project of opening an establishment.

DISCOVER ALSO LE FLACONNEUR

With great enthusiasm, we co-created the « Flaconneur » in Rignac, in 2000. It is a wine bar where we offer an authentic cuisine accompanied by organic and natural wines offered by our friends and associates Maguy and Gilles. We are delighted to have given new life to this establishment in the heart of the village.

A warn, friendly, and sharing place in the heart of the village of Rignac.

After some work, we gave a new identity to this place « Le Flaconneur ».
